Beer maturation tanks are used after fermenting, it is also called beer bright tank, on the other hand the beer fermentation tank can also used as the beer maturation tank.
Our technical process when mature the beer
Maturation tank operation
a. 24 hours after the wort put into the fermenters, open the drain outlet valve slowly, get rid of the drain.
b. Test the sugar degree everyday before seal the fermenters
c. Barley beer: when the sugar degree drop to 4.2±0.2Bx and the temperature naturally up to 12℃, seal the fermenter, and up the pressure to 0.14mpa and keep for 4-7 days.
d. wheat beer: when the sugar degree drop to 4.2±0.2Bx and the temperature naturally up to 18℃, seal the fermenter, and up the pressure to 0.14mpa and keep for 4 days.
e. Diacetyl test: after sealing the tank 4 days, sampling to taste, if there is no obvious diacetyl flavor, the temperature can be dropped, if not, it can be delayed for 1-3 days.
